Salmon Burgers, Quinoa & Green Beans

Ingredients:

  • 4 Salmon Fillets
  • 3 Medium Sweet Potato
  • 1 Red Onion
  • 1 Piece Fresh Ginger (Thumb Sized)
  • 1 Large Handful Fresh Coriander
  • 1 Tbsp Extra Virgin Olive Oil
  • 1/4 Cup Quinoa (Per person)
  • 100g Green Beans (Per person)
  • 1 Chicken / Vegetable Stock Cube
  • 1 Tbsp Natural Yoghurt (Per person)

Equipment needed

For this recipe you’ll need 1-2 baking trays, baking paper, mixing bowl.

Start by dicing up the Sweet Potato into small cubes, wash under the cold tap then add to a large pan. Cover in water and bring to a boil before reducing down to a gentle simmer for around 10-12 minutes.

Peel and finely chop both the Red Onion and Ginger, then the Coriander. Add to a bowl.

Save a small amount of Fresh Coriander as this will mix in nicely with your Quinoa later.

Using a sharp knife remove the skin from your Salmon fillets as shown in the clip below…

Now dice up the Salmon into 1cm cubes…add to the bowl with your other ingredients.

When the Sweet Potato is cooked, drain and mash up using a potato masher or fork.

Add the potato to your other ingredients and using a spoon mix everything together.

Line your Baking trays with Baking Paper.

Making the Salmon Burger Patties

Using a spoon scoop out the mixture and place on the tray, use the back of the spoon to form the burger patties.

Your mixture should make 10 – 12 Salmon burger patties.

Leave in the fridge for around 20 minutes allowing the Salmon Burgers to firm up.

(For best results here I recommend making the burger patties the night before and leaving in the fridge overnight.)

How to cook Quinoa

Whilst waiting for the burgers to set, rinse your Quinoa under the cold tap in a fine sieve then add to a pan and cover with around 2 cm water.

Bring the water to a boil then reduce down to a simmer, at this point break in your stock cube and stir until dissolved into the Quinoa.

Leave the Quinoa to simmer for 10 minutes or until the water has been absorbed, then remove from the heat, place a lid on the pan and leave to steam for 5 minutes.

Whilst your Quinoa is cooking focus your attention to the Green Beans.

With a sharp knife remove the top and bottom of the beans, then after washing under the cold tap place into a steamer. Set the steamer for 10 minutes. This should be sufficient for the beans to be cooked through nicely.

Remove your Salmon Burgers from the oven and serve alongside the Quinoa and Green Beans, I personally like the add 1 Tbsp of Natural Yogurt to this dish.
