The combination of cooking chicken with olives is a mainstay in our kitchen throughout the year…
In summer I like to combine them into lighter dishes like this Moroccan Chicken with Red Cabbage Slaw.
And in winter a hearty combination like this Chicken with Squash and Olive Stew really hits the spot on colder days.
For now though it’s all about using fresh herbs from the garden and packing this chicken with olives and cannellini bean recipe up to the brim with flavour.
Prep time – 15 minutes
Cooking time – 45 minutes
This recipe will make 4 portions, please adapt the ingredients listed accordingly to the number of portions you need…
- 4 Chicken Breasts
- 2 x 400g Cannellini Beans
- 300g Jar Pitted Green Olives
- 2 x 400g Chopped Tomatoes
- 4 Garlic Cloves
- 1 Vegetable Stock Cube
- 1 Bunch Fresh Thyme
- 1 Bunch Fresh Oregano
- 2 Tsp Coconut Oil

Equipment Needed –
Large Pan with Lid OR Casserole Dish / Colander / Sharp Knife
Start by finely chopping your garlic using a sharp knife.
Add 2 Tsp of Coconut oil to your cooking pan and place on a low heat.
When the oil has melted add the garlic to the pan, stirring occasionally to ensure it doesn’t burn.
Whilst the garlic is softening in the pan, dice up the chicken breasts.
Add the diced chicken into the pan and keep stirring occasionally, you want the chicken to take on a golden brown colour as it cooks.
When your chicken is starting to turn a golden brown colour add the 2 tins of chopped tomatoes.
Crumble the veg stock cube up into the pan and add 200ml of water.
Give everything a quick mix then leave to simmer.
Finely chop up both the fresh thyme and coriander. Add both these herbs to the pan and mix to combine the flavours.
Drain both the olives and cannellini beans using your colander…
Put the olives and cannellini beans into the pan and give everything another mix to combine everything together.
Leave to simmer on a low heat for 30 minutes.
Try serving this chicken with olives and cannellini beans dish with a slice of sourdough bread.
