3 Things To Do With A Cashew

Getting bored of plain old nuts?

Here are my 3 favourite ways to transform the ever popular Cashew Nut into something worth boasting about…

Cashew Nut Butter

Prep time: Soak 2 hours Cooking Time: 12-15 minutes

Ingredients:

1 Cup Cashew Nuts
1 Slice Lemon

Start by pre-soaking your Cashew Nuts in room temperature water with a squeeze of lemon juice. Leave to soak for around 2 hours.

Around 10 minutes before you remove the nuts from soaking set your oven to around 120 degrees.

Take a baking tray and cover with baking parchment / baking paper.

Drain the nuts using a sieve.

Place onto the baking tray and put them straight into the oven.

Roast for around 12-15 minutes checking progress throughout, When the Cashew Nuts are starting to brown it’s time to remove.

Leave the Cashews to cool for around 10-15 minutes.

Place into a food processor (My personal favourite here is a nutribullet)

Pulse the Nuts in phases until the consistency starts to change….keep doing this until a butter like consistency is reached.

Remove and store in an airtight container.

Salt & Pepper Roasted Cashew Nuts

1 Tsp Black Pepper
1 Tsp Olive Oil

1 Tsp Paprika Powder
1 Tsp Olive Oil

Around 10 minutes before you remove the nuts from soaking set your oven to around 120 degrees.

Take a baking tray and cover with baking parchment / baking paper.

Drain the nuts using a sieve.
